Tacos 2.0

Good Monday! 

When I was little Fridays were synonymous with tacos. After Thursday came tacos-day. A Friday a couple of weeks ago I invited two friends over for dinner and after some discussion on what to cook my friend explained she was in for something "home cooked". We choose tacos. This might not sound strange to you at all, but in my, and many other homes, tacos is not exactly the first thing that comes to mind when you think of "home cooked". The tacos culture in Sweden involves a lot of pre-packed ingredients you see: pre-packed tortilla breads, taco shells, taco spice mixes, guacamole spice mix, taco sauces...the list goes on. But we actually managed to make some real home made tacos anyway! Here's a list of everything we put on the table, my tip is to serve all ingredients separately. You may want to save some dishes by throwing all veggies into the same bowl - but it is so worth it to put everything on different plates. It adds a playful touch and looks incredibly nice!

What we brought to the table: 
Goat cheese
Oven baked tomato
Cucumber
Guacamole
Toasted corn
Home made tortilla bread
Toasted beans
Pickled red onion
Red pepper
Oven baked carrot strips

The more the merrier! 
And lastly, tacos is such an incredibly tasty dish that I think it would be too bad to only serve it on Fridays. Why not spice up your Monday?
