The more the merrier salad


Hit me with your best shot...or should I say salad? This self-confident, natural centerpiece on the table surely brings my imagination to new levels. What on earth is it that come together to form this constellation of breathtaking salad? It's like a jewellry box full of sparkling rubies and shining stones in all of the rainbow's colors. Well, all I want to say is that there is a significant if not remarkable difference between a salad and a salad. I mean, does this salad of mine have any resemblance at all to that exhausted piece of sad piece of materia you find in the school canteen? No. So what did I toss in this absolutely perfect salad? Well, I wouldn't be a food blogger if I didn't share the recipe, gosh I'm generous ;D No but seriously, the more the merrier, don't be afraid to experiement, this recipe is just one of an infinite number of variations you can make!

2 fresh apricots
250g sugar snaps
250g soy beans
Mache salad and fresh spinach
Dark bread croutons
Toasted sunflower and pumpkin seeds and walnuts
Oven baked tomato halves (Cut tomatos, pour over olive oil, salt, pepper, some chilli perhaps and let bake in the oven on about 175 degrees Celsius until goey and soft)
Chicken
Cooked beetroots
Some fresh mint and basil leaves
