yummy veggie tapas


It's something with cooking. Something that makes everything else on your mind just vanish and become  replaced by the pure harmony and pleasure it provides. Like there can't be anything more beautiful and interesting in the whole world than using the food proccessor to turn chickpeas, olive oil and spices into a creamy hummus. Nothing better than to slowly rub a piece of soft, white goat cheese between your fingers and let it cover some vegetables on a oven tray like freshly fallen snow. Nothing better than to feel the pure smell of happines and satisfaction radiating from the hazelnut breads in the oven, feel it in every single pore in your body. 
I've said it once and I will probably repeat it many times in this blog: I love cooking. On my own terms of course!
 
Well, that was a few words from a tired teenager slowly approaching the very end of the week and being forced to face the upcoming Monday. But it is true though, cooking really makes me relaxed in some way even when I am stressed. And I am stressed very often, since there is a lot of things going on in school. That is also why cooking have become a symbol for relaxation and happines, because I am only able to cook during weekends, it has become an exciting event to look forward to during the week. But of course, being allowed to cook more often wouldn't take the edge of happines from cooking, I like to experiment with food too much, so I would never grow tired of it! 
 
This week I made vegetarian tapas, salmon burgers and home made, self-invented hazelnut bread! From the beginning it was a walnut bread with whole wheat flour, but since I don't use that in my cooking I made some kind of mix with crushed flaxseed, oatmeal and hazelnuts. Which actually turned out super-duper-good! Sadly, by the time the food was finished I was so hungry and my camera was out of battery so I only snapped a few pictures of the food. But I will certainly re-do the bread and then I promise to put pictures and recipe on the blog!
 
Now, here is some tasty veggie tapas you will love! They're a perfect complement to any dish and the different consistencies provides a nice combination. The creamy hummus, chewy veggies and fresh tomatoes!
 
goat cheese (feta) gratinated vegetables
 
1 pepper
1 broccoli floret or approx. 200g broccoli
2 carrots
200g goat cheese
1 tbsp rapseed/olive/oil of your choice
2 tbsp lemon juice (optional)
 
1. Turn the oven to 150-200 C
2. Chop the pepper roughly
3. Chop the carrots into coins or cubes
4. Mix the pepper and carrot with the broccoli
5. Grease an oven tray with the oil and put the vegetables on it
6. Put in the oven for approximately 10-15 minutes or until the cheese has melted
7. Voíla!
 
hummus nomnom
 
200g chickpeas
1 1/2 dl (almost 1 cup) olive oil
salt
pepper
2 small or 1 big garlic clove
4 tbsp lemon juice
1 tsp chillipepper
1 tbsp tahini (sesam paste - although I didn't have any at home 
 
Mix everything together in a food processor and enjoy!
